What was the strangest creature that you or your players have encountered? Mine has been a single celled organism that they found them in the Upper Reaches of a Gas Giant's atmosphere however when exposed to pure refined H2 and the proximity to the jump grid, it began a process of rapid mutation leading to development of a multicelleur organism that began to clog up the pipes and breeding in the power plant. They then a week to find a way to destroy the organism without destroying the ship in Jump Space.

The end creature then looked something like this:

Of course, the thing managed also to get into the life support...with the players injesting it through the water supply but that is a tale for another day.

Is that from the White Dwarf scenario 'Sky Rig'?

Spoiler:
I loved that scenario, although the critter was a bit far fetched. In that scenario the critter, who derived its energy from the static energy in the jovian-style thunderclouds, could suck the energy right out of you. Eventually, you died of lethargy; there was no power in rour nervous system.

That'd make a great one-off PbP scenario.

Actually, no. But, I am glad to see that great minds think alike...

My other choice would have been a creature that exists as a sound only <sort of>. Vibrating sound molecules send a microscopic form of fungi from a dormant state into an excited reproductive cycle. They normally float in dark caves preying upon small creatures assimilating them whole in hours. Usually, the players get a chronic throat ache followed by injestion before they know what hit them. When the colony matures it seeks other sounds and vocal cords to call home...
